Oof that's a tough question. Okay I'm gonna suggest something radical here. What if you watched Voyager first, then Next Generation, then Deep Space Nine, then Lower Decks, then Strange New Worlds, then Original Series

  1. Voyager kinda works well as a standalone series seeing as they're stranded in the middle of nowhere with like no other Starfleet dealies to go on. You wouldn't really be missing much Alpha quadrant stuff since none of that applies. It's a reasonably self-contained story.
  2. Then you can go to Next Generation to see what a more "standard" Star Trek affair would be.
  3. Next Generation leads very naturally into Deep Space Nine with Wolf 359 and Locutus being directly related to Sisko's backstory.
  4. DS9 has the Dominion War, which is crucial to Mariner's backstory on Lower Decks. By this point in the watch order you'll be intimately familiar with the TNG era, so you'll get most of the references Lower Decks makes.
  5. Lower Decks has a crossover episode with Strange New Worlds where Mariner and Boimler go back in time and meet Captain Pike.
  6. Strange New Worlds takes place almost directly before The Original Series, and would at this point be a fun "see how it all started" affair
